Description

butter me up! – our butter chicken

Meaning prepared in butter (ghee)

Originating from Delhi but adopted and westernised by the British.

Mild and sweet with a moorish flavour, this curry will have you licking the bowl clean.

Butter Chicken is generally peoples first introduction to Indian cuisine due to its mildness, but don’t let that discount this as an authentic curry, this blend contains 17 therapeutic whole and ground spices and deserves its place as a family staple.

Cooking/Serving suggestions

• For a more authentic flavour use ghee — it is the butter in Butter Chicken.

• Most popularly prepared with chicken, however, can be easily transformed into a creative vegetarian dish by using any desired vegetables or plant based product.

• Add chilli if heat is desired

• Serve with chopped coriander to taste

• Veggie option suggestion – roast zucchini, sweet potato, cauliflower.

• Serve with pappadums or roti to scoop up the delicious curry sauce.

Rayles tip:

I prefer to cook my Butter me Up! with a whole chilli when cooking the onion, garlic and ginger and removed prior to adding wet ingredients. (so someone doesn’t accidentally end up with it)

I recommend using chicken thigh as it keeps its moistness, I ask my butcher to chop mine into stirfry slices, just taking another step out of the preparation process.

So easy and sooo delicious. Do yourself a favour and buy Off the Rayles “Butter me up”. You’ll never bother with a store bought butter chicken again.

This is my families favourite. My daughter rarely eats meat and not usually into spices or sauce. Yet this has become her favourite dinner. I grew up in an Indian community and never been able produce a curry so authentic in flavour. Thank you Ray for your amazing business and bundles greatness.

Made this last night. It was divine. Made the packet up according to the instructions, but as I am lactose intolerant I used olive oil instead of ghee and light coconut cream. So easy to make. It certainly rivals any restaurant dish. Well done. Streets ahead of any shop bough butter chicken. I’ll certainly be buying more. We live in the UK and I’ll be taking them home with me in the case.
